I’ve been making vegetable and fruit chips like these for years and my kids and all of their friends love them. I use extra virgin olive oil to fry them when I need to whip up a quick batch otherwise baking them is the way to go. It retains the flavor better.

I tried making these with some of the more unusual veggies such as eggplant and zucchini. The kids ate these up.
